Ramadan 101: Day 18
Koushari is a popular street food in Egypt. Made of Egyptian rice, lentils, pasta, a spicy tomato sauce, and topped with caramelized onions- I call it "Cairo in a Cup". Originally inspired by Indian Kitchiri, it is cheap and filling, it has been a popular street food with the masses for centuries.
As a result, its' delicious taste and appeal are sometimes taken for granted by locals. Tourists and Egyptian emigres, however, can't get enough. It seems as though whenever someone is nostalgic for Egypt, they're simultaneously hungry for Koushari!
