My 5 Favorite Mediterranean Salads for Memorial Day

Did you know that May is National Salad Month? Many of us, myself included, are guilty of what I call "a salad rut"....meaning that we tend to eat the same salad over and over again. Most days, I eat a lunch consisting of a small plate of pasta with a vegetable based "sauce" followed by a mixed green salad. For dinner, or special occasions, however, I like to mix things up by serving a bunch of different salads together. The combination of sweet and sour flavors and different textures can be really satisfying and refreshing. Whether you're firing up the grill or cooking for one this holiday weekend...these healthful, sunny Mediterranean salads will make a bright addition to your meal!
