5 Ideas for DIY Market Dinners

June is National Fresh Fruit and Vegetable Month. With all of the seasonal produce currently available - getting more plant based foods on our plates has never been easier! The Mediterranean Diet actually recommends that they make up the base of all of our meals. In The Ultimate Mediterranean Diet Cookbook I wrote:

"Medical doctors and supporters of the Mediterranean diet believe that, for optimal health, a variety of plant foods should make up the majority of our meals. Residents of Greece consume an average of six or more servings of fruits and vegetables a day, which is nothing unique in the Mediterranean region, where a cornucopia of fresh, ripe produce is inexpensive, delicious, and readily available.

In countries outside the Mediterranean, the challenges of procuring local, organic produce on a daily basis can be overcome by planning ahead and shopping smartly. Maintain a list of seasonal produce available in your area, and you can reap the rewards of incorporating more of these nutritional powerhouses into your diet." Here are 5 easy and delicious ways to reap the nutritional benefits that fruits and vegetables have to offer:
