An Apple a Day

Despite the popularity of the adage "an apple a day keeps the doctor away," most Americans eat only 1 apple per week! I'd love to change that.

The second week of August is known as National Apple Week. According to The Washington Apple Commission"Eating one large apple provides 20% of the recommended daily value of dietary fiber, 8% of the antioxidant Vitamin C, and 7% of your day’s potassium, all for only 130 calories… with no fat, no sodium, and no cholesterol!"

In my professional career, I have worked on apple recipes for the US Apple Association, Harris Teeter, and the USDA.  I also include many apple-based recipes in my cookbooks.   Here are some of great recipes that make enjoying more apples all year long as easy as pie.

 Fruit Crisp

Italian Apple, Almond, and Amaretti Cake

Whole Wheat Oat, Apple, and Cranberry Muffins

Tuna Apple Salad
